Red gurnard

caught at Oxwich Bay, Gower

Pan fried gurnard fillets with garlic butter

2x gurnard fillets, sunflower oil, butter, garlic, lemon juice, salt and ground black pepper

Season and fry the gurnard fillets in the oil for 2 mins. Remove to warm plate. Fry the garlic in the butter, add lemon juice, spoon over fish and serve.
